Sodium metabisulfite (Na2S2O5) is an inorganic compound that is white or yellow crystalline with a strong pungent odor. It is soluble in water and the aqueous solution is acidic. When in contact with strong acids, it releases sulfur dioxide and generates corresponding salts. If left in the air for a long time, it will oxidize to sodium sulfate, so sodium pyrosulfite cannot be stored for a long time.
